How to Cook the Thai Traditional Style Stir Fried Noodles in Soy Sauce


Here lies various recipes of Thai style “Pad See Ew” as well as tips on how to cook this dish “deliciously well” along with making money out of it profitably.




Before we proceed on to the steps, the following ingredients and garnishes are needed:


  1. 200-500 grams of noodles (Ready-cooked ones can be found in common marketplaces. Make sure the noodles are fat, wide noodles)
  2. Adequate amount of fresh pork (about half a kilograms will be just fine) Pork is the main ingredient in needed for this dish.
  3. Selected young Chinese kales (try to select its young upper and middle stems) for about 1 kilogram.
  4. 1-2 eggs will be needed. Does not matter if it’s chicken eggs or duck eggs. I do prefer duck eggs though. Duck eggs go well together with this dish.
  5. Grounded peppers
  6. Fresh chili and vinegar (Chop chili into small bits and portions then add them into the vinegar)
  7. Vegetable oil, Chopped garlic, flavoring sauce, brown sugar, soy sauce, black soy sauce, fish sauce, seasoning powder, and flavoring powder

Before we proceed to the next steps, it is important and essential to make sure all garnishes and ingredients are present. If not, the recipe might not be complete. Once all ingredients and garnishes are gathered, let us now start a step-by-step process of Pad See Ew.


#1. Chop or slice pork into moderate sizes, not too thick or thin, just beautifully sliced. Slice them all into equal portions and marinate them in soy sauce to eliminate raw and fishy odors. Leave the pork for about 30 minutes to 1 hour.

#2. Prepare Chinese kales and garlic while the pork is still marinating in soy sauce. Peel off the kales’ outer coverings and prepare to clean them. Once you’ve cleaned them, remove the down parts of the kales to use the middle to higher parts of the kales then slice them diagonally into moderate slices by not making them too thick or thin. Chop the upper parts and leafs into equal portions. Then, clean them in clear water and leave them in a container for a while.

#3. Peel off 5-7 garlic ‘til it reaches its white inner skin. Pound the garlic so that it’ll be easier to chop them into small portions. Do not chop them so much that it may cause changes in tastes of the dish which can be unfavorable at times. Once it is done, leave them in a separate container.

#4. Work with noodles. In case you bought the ready-cooked ones. (boil them for about 1 minute or else they’ll expand and it’ll no longer be tasty) Use a tool to separate the noodles or else when stirred, they can roll up into swirls.

#5. Now it’s the time to fry the noodles. Turn on the stove and add 2-3 full spoons of vegetable oil. Do not add more than that since pork has its own oils as well. Level the stove and make the flames moderate, not to burn the ingredients. Add chopped garlic into the pan and stir them for a while until they are well-cooked. (This part is usually where garlic can be burned) Add marinated pork into the pan and stir them along with chopped garlic until they both are well-cooked. Then, add the noodles into the pan follow by all the garnishes and mix them altogether along with the ingredients. At that time, level down the flames to lessen the probability that garlic will burn themselves. Use a spatula to set aside the ingredients in the pan to leave a space for cooking oil. Slant the pan a little and pour down 1 table spoon of vegetable oil into the pan and level up the flames until the oil is well-cooked. Use the end of a spatula to break or pound the eggs onto the space where oil is poured. Stir the eggs until they are well-cooked then gradually stir all ingredients that were set aside together with the eggs until all are cooked. Once the ingredients are all mixed up, add Chinese kales, fish sauce, seasoning powder, and flavoring powder into the pan and mix them altogether until they are cooked. Turn off the stove and the gas then it’s all done!

#6. The last step is perhaps, to taste the dish. Once it is done, use a spatula to gather the cooked dish onto a plate then add grounded pepper on top of the dish. Well, guess it’s now ready to be eaten!
